IMBIBE | Crudo Bar x On the Terrace x Acquafarina Restaurant

Downtown—(May 17, 2023) Michelin Guide recommended Italian fine-dining restaurant Acquafarina recently installed Chef Jefferson Alvarez as its Culinary Director earlier this year alongside reestablishing his weekly Chef's Lab meals (served on Tuesdays) while making a string of other moves behind the kitchen since then.

Last month, we were invited to share the entirety of Acquafarina's just launched Crudo (Italian for "raw") & Ceviche Bar section of its rotating menu featuring a changing array of raw fish, shellfish, and beef dishes dressed with either citrus, olive oil, or vinaigrette to enhance the flavours of each item.

First, however, we were also treated to some refreshing Ferrari Brut sparkling wine. On Wednesday nights, diners can enjoy a complimentary glass with the first crudo or ceviche dish ordered off the menu.

Acquafarina's mildly hidden dining terrace—somehow both inside and outdoors at the same time—is firmly situated in the heart of Downtown Vancouver overlooking West Georgia Street yet still echoes the restaurant vibes reminiscent of the Mediterranean.
