Coal Harbour—(June 1, 2017) The newly opened H2 Rotisserie & Bar inside The Westin Bayshore hotel toward the end of Waterfront may specialize in upscale comfort food, local craft beers, and regional spirits, but its the scenic location and view that sells the revamped dining establishment.
The modern restaurant and bar located along Downtown Vancouver's iconic seawall replaces both the old Seawall Bar & Grill and Currents at Bayshore Restaurant. Guests can choose from a variety of sixteen BC beers alongside a host of locally distilled liquors and an exclusively BC wine list.
Inside, H2 seats a hundred and sixty guests and seventy outside on its spacious garden patio. Situated at the edge of Stanley Park overlooking Coal Harbour and the North Shore mountains, the bustling open kitchen boasts a new menu renowned Executive Chef Kamal Silva and day-to-day restaurant chef Caitlin Mark.
The titular focus on spice-rubbed Abbotsford chickens roasting on the rotisserie is complemented with various culinary takes on classic dishes as well as inventive uses for regional ingredients. H2 is also introducing community-making traditions like Al Fresco style longtable dinners, weekly Sunday suppers, and chef-led cooking classes.
For the curious, H2 is named after two different elements considered integral to the vibe of the Rotisserie & Bar: heat (from the rotisserie) and hops (from the beer). Other moniker possibilities floated include "hoots and hollers" (from joyful customers) or "heights and harbour" (as seen through the windows). Name aside, I say, stick to the chicken and drinks.
